Our family recipe – Frankfurter Kranz

Ingredients for the dough:

  • 280g Flour
  • 170g Sugar
  • 1.5 tsp Baking powder
  • 5 Eggsr
  • 125g Butter
  • Lemon zest

Ingredients for the butter cream:

  • 150g Sugar
  • 200g Butter
  • 4 Egg yolks
  • 2 tbsp Rum

Ingredients for the garnish:

  • 200g Brittle
  • 1 Packet candied cherries

Preparation:

Dough preparation:

Melt butter and let it cool. Separate egg white and yolk and beat the egg whites. Beat the melted butter, sugar and egg yolks until it forms a foamy consistency. Mix the flour and the baking powder and add it to the egg yolk mixture. Finally, fold in the beaten egg whites and pour onto a baking tray. Bake at 175°C for 45 minutes. Cool on a grid.

Cream preparation:

Beat the butter until it foams. Heat the sugar with 4 tbsp of water and let it boil until a thick consistency is obtained.
Beat the egg yolks and slowly add the sugar syrup. Continue beating until the mix is cooled. Mix in the butter and beat well.

Finishing:

Cut the prepared pound cake into 2.
On one layer, spread raspberry or cherry jelly and top with the butter cream.
Place the second cake layer on top and cover the entire cake with the butter cream and garnish with the brittle.
Some butter cream can also be used for garnishing using a piping bag. Finish up with some cut cherries.
